P90X - SuperBowl Menu

Yes...even a SuperBowl menu can be healthy!

Last night we had some folks over, so I got to thinking how boring it would be eating healthy!!! HAHA! But....NO....I'm going to grill it up.

Decided to make Chicken Fajitas...Grill Style!

Started with Chicken Breasts and Made a Carribean Jerk Seasoning:

Chilli Powder
Garlic Powder

Juice of 2 Limes
Juice of 1 Sm Orange
Olive Oil

Lightly Brush Chicken with Oil
Squeeze Limes and Orange coating the chicken
Dust the Chicken with the Jerk Seasoning

Heat Grill to HIGH!!!! Grill the Chicken Until done....5-7 minutes per side.

Red Onion & White Onion Sliced 1/2" Thick
Lightly Oil...Light Salt and Pepper
Grill on High Grill until almost clear in color

3 Bell Peppers
2 Anaheim Peppers
1 Pablano Pepper
Lightly Oil Peppers and Lightly Salt & Pepper them.
Grill on High until charred.

Remove all from the Grill....Slice Up.

Heat some LOW CARB Corn Tortillas and Enjoy!!!

Add some fat free cheese and you are good to go!!!!
